SWEET BUN RECIPE (NO TIME DOUGH METHOD)

INGREDIENTS                                         %

 

Flour  : 100.00
Water : 53.0
Compressed Yeast : 4.0 - 6.0
Sugar : 20.0
Shortening : 6.0
Margarine 6.0
Salt : 1.2
Unbromated Improver SS103U : 1.0 - 1.5

 

OPTIONAL INGREDIENTS

 

Calcium Propionate (Preservative) : 0.1 - 0.3
Skimmed Milk Powder  : 2.0 - 4.0
Eggs : 8.0 - 10.0
Flavour : 2.0 - 4.0

METHOD
  1. Weigh then mix all the ingredients together in the mixer.
  2. Pour in the water and mix the dough until developed.
  3. Rest the dough for 10 minutes.
  4. Divide the dough into required portions.
  5. Place the dough portions into a pan.
  6. Proof the dough to a required height.
  7. Bake in the oven for 25 minutes at 190蚓.
  8. Leave the buns to cool completely before packing.

無脂奶粉 : 2.0 - 4.0
: 8.0 - 10.0
香精 : 2.0 - 4.0

製造方法

  1. 稱后攪伴所有的乾材料在攪拌機.
  2. 把水倒進, 攪拌麵糰至有闊展性質.
  3. 把攪拌好的麵糰休息 10 分鐘.
  4. 然后分切及整形根據所需之重量.
  5. 整形后的麵糰放在烤盤裡.
  6. 讓麵糰發酵至所需求之高度.
  7. 烘烤25分鐘在溫度190oC之烤爐.
  8. 麵包冷卻之后才包裝.
