Swiss Roll


Ingredient Quantity Swiss Roll
Low protein flour (Green Ferry brand) 3/4 cup
Eggs 3
Boiling water 2 tsp
Baking Powder 1 tsp
Castor sugar 1/2 cup
Pandan extract 1 tsp
Pandan essence 2 to 3 drops
Vanilla Cream  
Butter 125g
Castor sugar 1/2 cup
Vanilla essence 1 tsp



1/ Beat eggs in small bowl with electric mixer for about 3 minutes or until thick and creamy.

2/ Gradually add sugar, beat until dissolved between each addition.

3/ Transfer mixture to large bowl, fold in sifted flour, baking powder, water, pandan extract and pandan essence.

4/ Spread mixture into prepared pan, bake in moderate oven (180 C degrees) for about 10 to 15 minutes.

5/ Turn cake immediately onto paper. Trim edges from sides of cake.

6/ Spread hot cake evenly with vanilla cream, roll up from the short side using paper as a guide.


Vanilla Cream :

Cream butter, essence and sugar in small bowl with electric mixer until light and fluffy or until mixture is white in color and sugar has dissolved.
